Khan books by Greg Cox are the best Trek books ever!
Written adaptations of TOS episodes are nice to read if you've seen the episodes a million times.
I like the Starfleet Academy books because it's fun to imagine them during their academy days! ^^ (also the stuff between Spock and McCoy is funny XD)
I was at a used book store, and purchased The Best of Trek #2 on a whim. It turned out to be one of the most interesting Trek-related things I ever read. It is a collection of the best articles from the offical Star Trek Magazine. It has essays all the way from the history of the transporter system to an essay on why women love Spock! ^^ It's great. I'm currently on a hunt for the other volumes, which is not going very well. >.>
